Oatmeal Butterscotch Cookies
Ingredients:
- ½ cup butter, softened
- 3/4 cup brown sugar
- ½ cup sugar
- 2 Eggs
- 1 teaspoon vanilla
- 1-½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 3 cups quick oats uncooked
- 1 bag butterscotch chips
Instructions:
- Preheat over to 350
- Beat together butter and sugars until light and fluffy
- Add eggs and vanilla to butter mixture and combine
- Add flour, baking soda, cinnamon and salt and mix well
- Mix in butterscotch chips
- Scoop cookies with an ice cream scoop for consistency
- Bake for 8-10 minutes until light golden brown
