Oatmeal Butterscotch Cookies

Ingredients:

  • ½ cup butter, softened
  • 3/4 cup brown sugar
  • ½ cup sugar
  • 2 Eggs
  • 1 teaspoon vanilla
  • 1-½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt 
  • 3 cups quick oats uncooked 
  • 1 bag butterscotch chips


Instructions:

  • Preheat over to 350
  • Beat together butter and sugars until light and fluffy
  • Add eggs and vanilla to butter mixture and combine
  • Add flour, baking soda, cinnamon and salt and mix well
  • Mix in butterscotch chips
  • Scoop cookies with an ice cream scoop for consistency
  • Bake for 8-10 minutes until light golden brown
